Each Culatello is carefully cut from the heart of a 40 lb Heritage breed ham. Only the meat closest to the bone is used in this delicacy. Hence it is often referred to at the "heart of the prosciutto". After almost a year of carefully controlled air drying, the finished Culatello results in about 5 pounds of declicate, buttery meat that practically melts on your tongue.
Product is sold whole and is not pre-sliced. Access to a rotary slicer is a must in order to enjoy our whole Culatello.
